Ingredients
- 4 medium courgettes
- 200g ricotta cheese
- 1 red onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 50g breadcrumbs
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C.
- Cut the courgettes in half lengthwise and scoop out the flesh, leaving a 1cm border. Chop the scooped-out flesh and set aside.
- In a pan, heat 1 tbsp of olive oil over medium heat. Add the onion, garlic, and red pepper. Cook until softened, about 5 minutes.
- Add the chopped courgette flesh to the pan and cook for another 3 minutes. Remove from heat and let it cool slightly.
- In a bowl, mix the ricotta cheese, breadcrumbs, thyme, and the cooked vegetable mixture. Season with salt and pepper.
- Stuff the courgette halves with the ricotta mixture and place them in a baking dish. Drizzle with the remaining olive oil.
- Bake for 25-30 minutes, or until the courgettes are tender and the filling is golden brown.
