St. Austell Stuffed Courgettes

Ingredients

  • 4 medium courgettes
  • 200g ricotta cheese
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 50g breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C.
  2. Cut the courgettes in half lengthwise and scoop out the flesh, leaving a 1cm border. Chop the scooped-out flesh and set aside.
  3. In a pan, heat 1 tbsp of olive oil over medium heat. Add the onion, garlic, and red pepper. Cook until softened, about 5 minutes.
  4. Add the chopped courgette flesh to the pan and cook for another 3 minutes. Remove from heat and let it cool slightly.
  5. In a bowl, mix the ricotta cheese, breadcrumbs, thyme, and the cooked vegetable mixture. Season with salt and pepper.
  6. Stuff the courgette halves with the ricotta mixture and place them in a baking dish. Drizzle with the remaining olive oil.
  7. Bake for 25-30 minutes, or until the courgettes are tender and the filling is golden brown.
