St Bride's Bay Bara Brith

Ingredients

  • 450g mixed dried fruit
  • 300ml hot black tea
  • 225g self-raising flour
  • 150g brown sugar
  • 1 egg, beaten
  • 1 tsp mixed spice
  • 1 tbsp marmalade

Instructions

  1. Place the mixed dried fruit in a bowl and pour the hot black tea over it. Let it soak overnight.
  2. Preheat the oven to 180°C (350°F) and grease a loaf tin.
  3. In a large mixing bowl, sift the self-raising flour and mixed spice. Stir in the brown sugar.
  4. Add the soaked dried fruit (including any remaining tea), beaten egg, and marmalade to the flour mixture. Stir until well combined.
  5. Pour the mixture into the prepared loaf tin and smooth the top.
  6. Bake in the preheated oven for 1 hour or until a skewer inserted into the center comes out clean.
  7. Allow the bara brith to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
