St Bride's Bay Bara Brith is a traditional Welsh fruit loaf that is perfect for teatime or as a delicious snack. This recipe combines the rich flavors of dried fruits and spices, making it a delightful treat for any occasion.
Ingredients
- 450g mixed dried fruit
- 300ml hot black tea
- 225g self-raising flour
- 150g brown sugar
- 1 egg, beaten
- 1 tsp mixed spice
- 1 tbsp marmalade
Instructions
- Place the mixed dried fruit in a bowl and pour the hot black tea over it. Let it soak overnight.
- Preheat the oven to 180°C (350°F) and grease a loaf tin.
- In a large mixing bowl, sift the self-raising flour and mixed spice. Stir in the brown sugar.
- Add the soaked dried fruit (including any remaining tea), beaten egg, and marmalade to the flour mixture. Stir until well combined.
- Pour the mixture into the prepared loaf tin and smooth the top.
- Bake in the preheated oven for 1 hour or until a skewer inserted into the center comes out clean.
- Allow the bara brith to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
