St. David's Day Leek And Potato Soup
Celebrate St. David's Day with this traditional Welsh Leek and Potato Soup. This hearty and comforting soup is perfect for a cozy meal on a chilly day.
Ingredients
- 2 leeks, sliced
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- In a large pot, melt the butter over medium heat. Add the leeks, onion, and garlic. Cook until softened, about 5 minutes.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
- Serve hot, garnished with a drizzle of cream and freshly chopped chives, if desired.
