St David's Steak And Ale Pie

Ingredients

  • 500g stewing beef, cubed
  • 2 onions, chopped
  • 2 carrots, sliced
  • 2 celery sticks, chopped
  • 2 garlic cloves, minced
  • 500ml ale
  • 500ml beef stock
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 500g puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large pot, brown the beef cubes in batches. Remove and set aside.
  2. Sauté the onions, carrots, celery, and garlic until softened.
  3. Sprinkle the flour over the vegetables and cook for 1-2 minutes.
  4. Return the beef to the pot and pour in the ale and beef stock. Add the tomato paste, Worcestershire sauce, salt, and pepper. Bring to a simmer and cook for 1.5-2 hours until the beef is tender and the sauce has thickened.
  5. Preheat the oven to 200°C (400°F).
  6. Transfer the beef filling to a pie dish and allow it to cool slightly.
  7. Roll out the puff pastry on a floured surface and place it over the pie dish, trimming any excess pastry. Brush the pastry with the beaten egg.
  8. Make a few slits in the pastry to allow steam to escape, then bake for 25-30 minutes until the pastry is golden and puffed.
  9. Serve the St David's Steak and Ale Pie hot, with your favorite sides.
