Ingredients
- 500g stewing beef, cubed
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery sticks, chopped
- 2 garlic cloves, minced
- 500ml ale
- 500ml beef stock
- 2 tbsp flour
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 500g puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a large pot, brown the beef cubes in batches. Remove and set aside.
- Sauté the onions, carrots, celery, and garlic until softened.
- Sprinkle the flour over the vegetables and cook for 1-2 minutes.
- Return the beef to the pot and pour in the ale and beef stock. Add the tomato paste, Worcestershire sauce, salt, and pepper. Bring to a simmer and cook for 1.5-2 hours until the beef is tender and the sauce has thickened.
- Preheat the oven to 200°C (400°F).
- Transfer the beef filling to a pie dish and allow it to cool slightly.
- Roll out the puff pastry on a floured surface and place it over the pie dish, trimming any excess pastry. Brush the pastry with the beaten egg.
- Make a few slits in the pastry to allow steam to escape, then bake for 25-30 minutes until the pastry is golden and puffed.
