St. Ives Seafood Chowder

Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 lb mixed seafood (shrimp, scallops, mussels)
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 3 large potatoes, diced
- 4 cups fish or vegetable stock
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened, then add the minced garlic and cook for another minute.
- Add the diced potatoes and fish or vegetable stock to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Add the white fish fillets and mixed seafood to the pot, and simmer for a few minutes until the seafood is cooked through.
- Stir in the heavy cream and butter, then season with salt and pepper to taste.
- Serve the chowder hot, garnished with the crispy bacon and chopped fresh parsley.
