St. Ives Seafood Chowder

Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 lb mixed seafood (shrimp, scallops, mussels)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 large potatoes, diced
  • 4 cups fish or vegetable stock
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and cook until softened, then add the minced garlic and cook for another minute.
  3. Add the diced potatoes and fish or vegetable stock to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Add the white fish fillets and mixed seafood to the pot, and simmer for a few minutes until the seafood is cooked through.
  5. Stir in the heavy cream and butter, then season with salt and pepper to taste.
  6. Serve the chowder hot, garnished with the crispy bacon and chopped fresh parsley.
