St. Just Sticky Toffee Pudding

Ingredients

  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 1/2 cups boiling water
  • 1/4 cup unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/4 cup heavy cream
  • 1/4 cup unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking dish.
  2. In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.
  3. In a large bowl, cream together the butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt; gradually stir into the egg mixture. Fold in the date mixture. Pour the batter into the prepared baking dish.
  5. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, make the toffee sauce. In a saucepan, combine the brown sugar, heavy cream, and butter. Bring to a gentle boil, stirring constantly. Cook for 2 minutes, then remove from heat.
  7. Once the pudding is done, poke holes in the top with a fork. Pour half of the hot toffee sauce over the pudding. Let it stand for 5 minutes, then serve with the remaining toffee sauce.
