Ingredients

  • 1 scotch bonnet pepper, whole
  • 1 cup coconut milk
  • 6 cups water

Instructions

  1. In a large pot, heat the oil over medium-high heat. Add the goat meat and brown on all sides.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the tomatoes, thyme, bay leaves, and whole scotch bonnet pepper.
  4. Pour in the coconut milk and water. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 2 hours, or until the meat is tender.
  6. Adjust seasoning if needed, and serve hot.
