Ingredients
- 3 lbs goat meat, cut into chunks
- 2 tbsp oil
- 1 onion, chopped
- 4 cloves garlic, minced

- 1 cup coconut milk
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the oil over medium-high heat. Add the goat meat and brown on all sides.
- Add the onion and garlic, and cook until softened.
- Stir in the tomatoes, thyme, bay leaves, and whole scotch bonnet pepper.
- Pour in the coconut milk and water. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 2 hours, or until the meat is tender.
- Adjust seasoning if needed, and serve hot.
