St. Kitts Conch Chowder

Ingredients

  • 2 lbs conch, cleaned and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 3 cups fish or vegetable broth
  • 1 cup coconut milk
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until the vegetables are softened.
  2. Add the diced conch and cook for 5 minutes.
  3. Stir in the tomatoes, thyme, and paprika. Cook for an additional 2 minutes.
  4. Pour in the fish or vegetable broth and coconut milk. Season with salt and pepper. Bring the chowder to a simmer and let it cook for 30 minutes, stirring occasionally.
  5. Once the chowder has thickened slightly, it is ready to serve. Ladle into bowls and enjoy!
