Ingredients
- 2 lbs conch, cleaned and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 3 cups fish or vegetable broth
- 1 cup coconut milk
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until the vegetables are softened.
- Add the diced conch and cook for 5 minutes.
- Stir in the tomatoes, thyme, and paprika. Cook for an additional 2 minutes.
- Pour in the fish or vegetable broth and coconut milk. Season with salt and pepper. Bring the chowder to a simmer and let it cook for 30 minutes, stirring occasionally.
- Once the chowder has thickened slightly, it is ready to serve. Ladle into bowls and enjoy!
