Ingredients
- 2 ripe plantains, peeled and sliced
- 1 lb salted codfish, soaked and flaked
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, chopped (optional for heat)
- 1 cup coconut milk
- 2 cups water
- 2 tbsp vegetable oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions, garlic, and bell pepper. Sauté until the vegetables are softened.
- Stir in the flaked saltfish and cook for 5 minutes.
- Add the tomatoes, scotch bonnet pepper (if using), thyme, and coconut milk. Simmer for 10 minutes.
- Add the sliced plantains and water to the pot. Cover and simmer for 20-25 minutes, or until the plantains are tender.
- Season with salt and pepper to taste.
- Serve the stew hot and enjoy!
