Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 lb salted codfish, soaked and flaked
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • 1 cup coconut milk
  • 2 cups water
  • 2 tbsp vegetable oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions, garlic, and bell pepper. Sauté until the vegetables are softened.
  3. Stir in the flaked saltfish and cook for 5 minutes.
  4. Add the tomatoes, scotch bonnet pepper (if using), thyme, and coconut milk. Simmer for 10 minutes.
  5. Add the sliced plantains and water to the pot. Cover and simmer for 20-25 minutes, or until the plantains are tender.
  6. Season with salt and pepper to taste.
  7. Serve the stew hot and enjoy!
