Ingredients
- 2 cups flaked saltfish
- 2 cups diced breadfruit
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1/4 cup chopped parsley
- 1/4 cup coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 pie crusts
Instructions
- Soak the saltfish in water for 1 hour, then drain and rinse.
- Boil the breadfruit until tender, then drain and mash.
- In a large skillet, heat the olive oil and sauté the onion, garlic, and bell pepper until softened.
- Add the saltfish, tomatoes, and parsley to the skillet and cook for 5 minutes.
- Stir in the mashed breadfruit and coconut milk, then season with salt and pepper.
- Line a pie dish with one pie crust, then pour in the saltfish and breadfruit mixture.
- Cover with the second pie crust, seal the edges, and cut slits in the top crust.
- Bake at 375°F for 30-35 minutes, or until the crust is golden brown.
