Ingredients

  • 2 cups flaked saltfish
  • 2 cups diced breadfruit

  • 1/4 cup chopped parsley
  • 1/4 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Soak the saltfish in water for 1 hour, then drain and rinse.
  2. Boil the breadfruit until tender, then drain and mash.
  3. In a large skillet, heat the olive oil and sauté the onion, garlic, and bell pepper until softened.
  4. Add the saltfish, tomatoes, and parsley to the skillet and cook for 5 minutes.
  5. Stir in the mashed breadfruit and coconut milk, then season with salt and pepper.
