Ingredients
- 4 medium zucchinis
- 2 cups mashed potatoes
- 1 cup chopped kale

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create "boats".
- In a large pot, boil the zucchini boats for 5 minutes, then remove and set aside.
- In the same pot, cook the chopped kale and onion in butter until softened.
- Add the mashed potatoes to the pot and mix well with the kale and onion mixture. Season with salt and pepper.
- Stuff the zucchini boats with the stamppot mixture and place them in a baking dish.
- Bake for 20-25 minutes until the zucchinis are tender and the tops are golden brown.
