Stamppot Stuffed Zucchini Boats

Ingredients

  • 4 medium zucchinis
  • 2 cups mashed potatoes

  • 4 tbsp butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create "boats".

  4. In the same pot, cook the chopped kale and onion in butter until softened.
  5. Add the mashed potatoes to the pot and mix well with the kale and onion mixture. Season with salt and pepper.
  6. Stuff the zucchini boats with the stamppot mixture and place them in a baking dish.
  7. Bake for 20-25 minutes until the zucchinis are tender and the tops are golden brown.
