Starbucks Pumpkin Muffin

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 and 1/4 cups granulated sugar
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a large bowl, whisk together the oil, pumpkin puree, eggs, and sugar until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the nuts and/or raisins/chocolate chips if using.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
