Stavanger-style Cabbage Rolls

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 can (14 ounces) tomato sauce
  • 1 cup beef broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a mixing bowl, combine the ground beef, uncooked rice, chopped onion, salt, pepper, and paprika. Mix well.
  3. Place a spoonful of the meat mixture onto each cabbage leaf. Roll the leaves, tucking in the sides, to form the cabbage rolls.
  4. In a large pot, arrange the cabbage rolls in a single layer. Pour the tomato sauce and beef broth over the rolls.
  5. Cover the pot and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
  6. Serve the Stavanger-style Cabbage Rolls hot, accompanied by a dollop of sour cream or lingonberry jam if desired.
