Ingredients

  • 1.5 lb stewing beef, diced
  • 2 onions, chopped
  • 2 carrots, sliced

  • 2 tbsp all-purpose flour
  • 1 cup ale
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • 14 oz puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large pot, brown the diced beef in batches and set aside.
  2. Sauté the onions, carrots, celery, and garlic until softened.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Pour in the ale and beef stock, then add the browned beef, tomato paste, bay leaves, salt, and pepper.
  5. Cover and simmer for 1.5 hours, stirring occasionally.
  6. Preheat the oven to 375°F (190°C).
  7. Transfer the beef mixture to a pie dish and top with puff pastry.
  8. Brush the pastry with egg wash and make a few slits on top.
  9. Bake for 25-30 minutes until the pastry is golden brown.
