Ingredients
- 1.5 lb stewing beef, diced
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery sticks, chopped
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup ale
- 1 cup beef stock
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and pepper to taste
- 14 oz puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a large pot, brown the diced beef in batches and set aside.
- Sauté the onions, carrots, celery, and garlic until softened.
- Stir in the flour and cook for 1-2 minutes.
- Pour in the ale and beef stock, then add the browned beef, tomato paste, bay leaves, salt, and pepper.
- Cover and simmer for 1.5 hours, stirring occasionally.
- Preheat the oven to 375°F (190°C).
- Transfer the beef mixture to a pie dish and top with puff pastry.
- Brush the pastry with egg wash and make a few slits on top.
- Bake for 25-30 minutes until the pastry is golden brown.
