Steak And Ale Pie Perfection

Ingredients
- 1.5 lb stewing beef, diced
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup ale
- 1 cup beef stock
- 2 tbsp tomato paste
- 2 sprigs of thyme
- Salt and pepper to taste
- 2 sheets of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a large pot, brown the diced beef in some oil over medium-high heat. Remove the beef and set aside.
- Add the onions, carrots, and celery to the pot and cook until softened.
- Add the garlic and flour, and cook for another 2 minutes.
- Pour in the ale and beef stock, then add the tomato paste, thyme, and browned beef. Season with salt and pepper.
- Simmer for 1.5 hours, or until the beef is tender and the sauce has thickened.
- Preheat the oven to 400°F (200°C).
- Transfer the beef filling to a pie dish and cover with puff pastry. Brush the pastry with the beaten egg.
- Bake for 25-30 minutes, or until the pastry is golden and puffed.
