Ingredients

  • 1.5 lb stewing beef, diced
  • 2 onions, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup ale
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • 2 sprigs of thyme
  • Salt and pepper to taste
  • 2 sheets of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large pot, brown the diced beef in some oil over medium-high heat. Remove the beef and set aside.
  2. Add the onions, carrots, and celery to the pot and cook until softened.
  3. Add the garlic and flour, and cook for another 2 minutes.
  4. Pour in the ale and beef stock, then add the tomato paste, thyme, and browned beef. Season with salt and pepper.
  5. Simmer for 1.5 hours, or until the beef is tender and the sauce has thickened.
  6. Preheat the oven to 400°F (200°C).
  7. Transfer the beef filling to a pie dish and cover with puff pastry. Brush the pastry with the beaten egg.
  8. Bake for 25-30 minutes, or until the pastry is golden and puffed.
