Steamed Banana Leaf Wrapped Meat (luwombo)

Ingredients

  • 2 lbs beef or chicken, cut into chunks
  • 2 large onions, sliced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1 cup peanut butter
  • 2 cups water
  • Salt and pepper to taste
  • 4 large banana leaves

Instructions

  1. Place the meat, onions, tomatoes, garlic, ginger, curry powder, paprika, and peanut butter in a large bowl. Mix well to coat the meat with the seasonings.
  2. Transfer the meat mixture to a large pot. Add water, salt, and pepper. Cover and simmer over low heat for 1.5 hours, stirring occasionally.
  3. Meanwhile, prepare the banana leaves by briefly passing them over an open flame to make them pliable.
  4. Divide the meat mixture into 4 portions and place each portion in the center of a banana leaf. Fold the sides of the leaf over the meat to form a packet, then secure with kitchen twine.
  5. Place the banana leaf packets in a steamer or large pot with a steamer basket. Steam for 30 minutes until the meat is tender and cooked through.
  6. Remove the banana leaf packets from the steamer and carefully open them. Serve the steamed meat with steamed rice or ugali.
