Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup white sugar
  • 1 tablespoon baking powder
  • 1 tablespoon active dry yeast
  • 1/4 cup warm water
  • 1/4 cup shortening
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon five-spice powder
  • 1 pound BBQ pork, diced

Instructions

  1. In a small bowl, dissolve the yeast in 1/4 cup of warm water. Let it stand for about 10 minutes.
  2. In a separate bowl, mix the flour, sugar, and baking powder. Cut in the shortening until the mixture resembles coarse crumbs.
  3. Stir in the yeast mixture and 1/4 cup of water. Mix until the dough comes together.
  4. Knead the dough on a floured surface until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour.
  5. While the dough is rising, prepare the BBQ pork filling by combining the soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and five-spice powder in a bowl. Add the diced BBQ pork and marinate for 30 minutes.
  6. After the dough has risen, punch it down and divide it into 12 pieces. Flatten each piece into a circle and place a spoonful of the BBQ pork filling in the center. Gather the edges and pinch to seal, then place each bun on a square of parchment paper.
  7. Place the buns in a steamer, cover, and let them rise for another 15 minutes. Steam the buns for 15-20 minutes until they are cooked through.
