Steamed Chicken With Fragrant Rice (hainanese Chicken Rice)

Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks green onions, chopped
  • 1 cucumber, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • Salt
  • White pepper

Instructions

  1. Wash the chicken and pat dry. Rub the chicken with salt inside and out.
  2. Stuff the cavity of the chicken with ginger slices and green onions.
  3. In a large pot, bring water to a boil. Carefully lower the chicken into the pot, breast side down. Cover and simmer for 30-40 minutes, or until the chicken is cooked through.
  4. Remove the chicken and place it in a bowl of ice water for 5 minutes. Then, remove and let it air dry. Rub the chicken with sesame oil and a pinch of salt.
  5. Rinse the rice and drain. In a pot, heat 1 tablespoon of sesame oil. Add minced garlic and sauté until fragrant. Add the rice and stir to coat with the oil and garlic.
  6. Transfer the rice to a rice cooker. Add the appropriate amount of water and cook the rice as usual.
  7. Once the rice is cooked, fluff it with a fork and season with salt and white pepper to taste.
  8. Slice the chicken and serve with the fragrant rice, sliced cucumber, and soy sauce on the side.
