Steamed Chicken With Fragrant Rice (hainanese Chicken Rice)
Hainanese Chicken Rice is a popular dish in Malaysian cuisine, known for its fragrant rice and tender steamed chicken. This recipe will guide you through the process of creating this flavorful and comforting dish.
Ingredients
- 1 whole chicken (about 3-4 lbs)
- 2 cups jasmine rice
- 4 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 stalks green onions, chopped
- 1 cucumber, sliced
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- Salt
- White pepper
Instructions
- Wash the chicken and pat dry. Rub the chicken with salt inside and out.
- Stuff the cavity of the chicken with ginger slices and green onions.
- In a large pot, bring water to a boil. Carefully lower the chicken into the pot, breast side down. Cover and simmer for 30-40 minutes, or until the chicken is cooked through.
- Remove the chicken and place it in a bowl of ice water for 5 minutes. Then, remove and let it air dry. Rub the chicken with sesame oil and a pinch of salt.
- Rinse the rice and drain. In a pot, heat 1 tablespoon of sesame oil. Add minced garlic and sauté until fragrant. Add the rice and stir to coat with the oil and garlic.
- Transfer the rice to a rice cooker. Add the appropriate amount of water and cook the rice as usual.
- Once the rice is cooked, fluff it with a fork and season with salt and white pepper to taste.
- Slice the chicken and serve with the fragrant rice, sliced cucumber, and soy sauce on the side.
