Steamed Chickpea Flour Cake (dhokla)

Ingredients

  • 2 cups chickpea flour
  • 1 cup yogurt
  • 1 teaspoon ginger paste
  • 1 green chili, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon fruit salt (eno)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • A handful of chopped coriander leaves
  • Grated coconut for garnish
  • Few curry leaves for garnish

Instructions

  1. In a bowl, mix chickpea flour, yogurt, ginger paste, green chili, turmeric powder, salt, and sugar to make a smooth batter.
  2. Add fruit salt to the batter and mix well.
  3. Pour the batter into a greased steaming dish and steam for 15-20 minutes or until a toothpick inserted comes out clean.
  4. Heat oil in a small pan and add mustard seeds. Once they splutter, add sesame seeds and curry leaves. Pour this tempering over the steamed dhokla.
  5. Garnish with chopped coriander leaves and grated coconut.
  6. Cut into squares and serve.
