Ingredients

  • 2 large Chinese eggplants, halved lengthwise
  • 200g minced pork
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place the halved eggplants in a steaming dish, cut side up.
  2. In a bowl, mix the minced pork, garlic, green onions, soy sauce, oyster sauce, sesame oil, sugar, cornstarch, salt, and pepper.
  3. Spoon the pork mixture onto the eggplant halves, spreading it evenly.
  4. Steam the eggplants and pork mixture for 15-20 minutes until the eggplants are tender and the pork is cooked through.
  5. Garnish with fresh cilantro before serving.
