Ingredients

  • 1 whole fresh fish (such as sea bass or snapper), cleaned and scaled
  • 3 slices ginger
  • 2 green onions, cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Instructions

  1. Place the fish on a heatproof dish and scatter the ginger slices on top.
  2. Steam the fish over high heat for about 10-12 minutes, or until cooked through.
  3. While the fish is steaming, mix the soy sauce, Shaoxing wine, sesame oil, sugar, and salt in a small bowl.
  4. Once the fish is cooked, carefully remove it from the steamer and pour off any accumulated liquid.
  5. Top the fish with the green onion strips, then pour the sauce over the fish.
  6. Heat a small amount of oil in a pan until it just begins to smoke, then carefully pour the hot oil over the green onions to release their aroma.
  7. Serve the fish hot with steamed rice.
