Ingredients
- 1 cup rice flour
- 1 1/2 cups water
- 1/4 teaspoon salt
- 8 oz shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/4 cup diced onion
- 1/4 cup wood ear mushrooms, soaked and chopped
- 2 tablespoons fish sauce
- 1/4 teaspoon ground black pepper
- 1/4 cup chopped cilantro
Instructions
- In a bowl, mix the rice flour, water, and salt to make the batter. Set aside.
- Heat 1 tablespoon of oil in a pan over medium heat. Add garlic and onion, then sauté until fragrant.
- Add shrimp and mushrooms to the pan, then cook until the shrimp turns pink.
- Remove the shrimp mixture from the heat and stir in fish sauce, black pepper, and cilantro.
- Heat a non-stick pan over medium heat and brush with the remaining oil. Pour a thin layer of the rice batter into the pan, cover, and steam for a few minutes until set.
- Place a spoonful of the shrimp filling onto the steamed rice sheet, then roll it up. Repeat with the remaining batter and filling.
- Serve the bánh cuốn with dipping sauce and enjoy!
