Steamed Rice Rolls with Shrimp (Bánh cuốn)

Ingredients

  • 1 cup rice flour
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 8 oz shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup diced onion
  • 1/4 cup wood ear mushrooms, soaked and chopped
  • 2 tablespoons fish sauce
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, mix the rice flour, water, and salt to make the batter. Set aside.
  2. Heat 1 tablespoon of oil in a pan over medium heat. Add garlic and onion, then sauté until fragrant.
  3. Add shrimp and mushrooms to the pan, then cook until the shrimp turns pink.
  4. Remove the shrimp mixture from the heat and stir in fish sauce, black pepper, and cilantro.
  5. Heat a non-stick pan over medium heat and brush with the remaining oil. Pour a thin layer of the rice batter into the pan, cover, and steam for a few minutes until set.
  6. Place a spoonful of the shrimp filling onto the steamed rice sheet, then roll it up. Repeat with the remaining batter and filling.
  7. Serve the bánh cuốn with dipping sauce and enjoy!
