Steamed Rice with Spicy Mutton (Sada Bhaat with Kosha Mangsho) is a traditional Bengali dish that combines tender, flavorful mutton with aromatic steamed rice. This dish is a staple in Bengali cuisine and is perfect for a hearty and satisfying meal.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 4-5 green chilies, slit
- 1/4 cup mustard oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat mustard oil in a heavy-bottomed pan. Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a few minutes.
- Now, add the mutton pieces and cook on high heat until they are browned.
- Reduce the heat, add the chopped tomatoes, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add 2 cups of water, cover the pan, and cook the mutton on low heat until it is tender and the gravy is thick.
- In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice and cook until it is 90% done. Drain the rice and set aside.
- In a large steamer, layer the partially cooked rice over the mutton gravy. Sprinkle slit green chilies on top.
- Cover the steamer and cook on medium heat for 10-15 minutes, allowing the rice to steam and absorb the flavors of the mutton.
- Garnish with fresh coriander leaves and serve hot.
