Steamed Rice With Spicy Mutton (sada Bhaat With Kosha Mangsho)

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 4-5 green chilies, slit
  • 1/4 cup mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat mustard oil in a heavy-bottomed pan. Add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and sauté for a few minutes.
  4. Now, add the mutton pieces and cook on high heat until they are browned.
  5. Reduce the heat, add the chopped tomatoes, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
  6. Add 2 cups of water, cover the pan, and cook the mutton on low heat until it is tender and the gravy is thick.
  7. In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice and cook until it is 90% done. Drain the rice and set aside.
  8. In a large steamer, layer the partially cooked rice over the mutton gravy. Sprinkle slit green chilies on top.
  9. Cover the steamer and cook on medium heat for 10-15 minutes, allowing the rice to steam and absorb the flavors of the mutton.
  10. Garnish with fresh coriander leaves and serve hot.
