Steamed Sea Bass with Ginger and Spring Onion (姜葱蒸鲈鱼)

Ingredients

  • 1 whole sea bass, cleaned and scaled
  • 3 tablespoons ginger, julienned
  • 3 stalks spring onion, julienned
  • 2 tablespoons light soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil

Instructions

  1. Place the sea bass on a heatproof dish and scatter half of the ginger and spring onion on top of the fish.
  2. In a small bowl, mix together the light soy sauce, Shaoxing wine, sesame oil, sugar, and salt. Pour this mixture over the fish.
  3. Sprinkle the remaining ginger and spring onion on top of the fish.
  4. Prepare a steamer and steam the fish over high heat for 15-20 minutes, or until the fish is cooked through.
  5. Heat the vegetable oil in a small saucepan until smoking hot, then pour it over the fish to release the fragrance of the ginger and spring onion.
  6. Serve the steamed sea bass hot with steamed rice.
