Ingredients
- 1 whole sea bass, cleaned and scaled
- 3 tablespoons ginger, julienned
- 3 stalks spring onion, julienned
- 2 tablespoons light soy sauce
- 1 tablespoon Shaoxing wine

- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
Instructions
- Place the sea bass on a heatproof dish and scatter half of the ginger and spring onion on top of the fish.
- In a small bowl, mix together the light soy sauce, Shaoxing wine, sesame oil, sugar, and salt. Pour this mixture over the fish.
- Sprinkle the remaining ginger and spring onion on top of the fish.
- Prepare a steamer and steam the fish over high heat for 15-20 minutes, or until the fish is cooked through.
- Heat the vegetable oil in a small saucepan until smoking hot, then pour it over the fish to release the fragrance of the ginger and spring onion.
- Serve the steamed sea bass hot with steamed rice.
