Ingredients

  • 1 lb ground pork
  • 1 cup chicken stock

  • 1 tsp ginger, minced
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 1/4 tsp white pepper

Instructions

  1. In a large bowl, mix the ground pork, green onions, ginger, soy sauce, sugar, sesame oil, and white pepper. Set aside.
  2. In a separate bowl, combine the flour and water to make the dough. Knead the dough until smooth, then cover and let it rest for 30 minutes.
  3. Roll out the dough into a long cylinder and cut it into small pieces. Flatten each piece into a round wrapper.
  4. Place a spoonful of the pork filling in the center of each wrapper. Pleat the edges of the wrapper to seal the dumplings.
  5. Place the dumplings in a steamer lined with parchment paper and steam for 8-10 minutes until cooked through.
  6. Serve the Shanghai dumplings hot with a dipping sauce made from soy sauce and vinegar.
