Steamed Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup diced tofu
  • 1 cup diced mushrooms
  • 1/2 cup diced carrots
  • 1/2 cup diced water chestnuts
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/4 cup chopped green onions

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a bowl, mix together the cooked rice, tofu, mushrooms, carrots, water chestnuts, garlic, soy sauce, oyster sauce, sesame oil, sugar, white pepper, and green onions.
  3. Stuff the bell peppers with the filling mixture.
  4. Place the stuffed bell peppers in a steamer and steam for 20-25 minutes until the peppers are tender.
  5. Serve hot and enjoy!
