Steamed Stuffed Bell Peppers (Zhēng Bǎo Jīngjiāo)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup diced tofu
  • 1/2 cup chopped mushrooms
  • 1/4 cup diced carrots
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Preheat the steamer.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix together the cooked rice, tofu, mushrooms, carrots, green onions, garlic, soy sauce, sesame oil, ground ginger, salt, and pepper.
  4. Stuff the bell peppers with the filling mixture.
