Steamed Yogurt Ice Cream (bhapa Doi Ice Cream)

Ingredients

  • 2 cups Greek yogurt
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped nuts (pistachios, almonds, or cashews)
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron strands
  • 1 tablespoon rose water

Instructions

  1. In a large bowl, mix the Greek yogurt, sweetened condensed milk, and heavy cream until smooth.
  2. Add the chopped nuts, cardamom powder, saffron strands, and rose water to the mixture and stir well.
  3. Pour the mixture into individual ramekins or a large heatproof dish.
  4. Cover the ramekins or dish with aluminum foil.
  5. Place a steamer basket in a large pot and fill it with enough water to reach just below the steamer basket.
  6. Place the ramekins or dish in the steamer basket, cover the pot, and steam for 30 minutes.
  7. Once done, remove the ramekins or dish from the steamer and let the bhapa doi ice cream cool to room temperature.
  8. Once cooled, cover the ramekins or dish with plastic wrap and place them in the freezer for at least 4 hours or overnight.
  9. Serve the steamed yogurt ice cream garnished with more chopped nuts and a sprinkle of saffron strands.
