Stew (chettinad Vegetable Stew)

Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped beans
  • 1 cup chopped cauliflower
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1/2 cup coconut milk
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 2-3 green chilies, slit
  • 1-inch cinnamon stick
  • 2-3 cloves
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds, cinnamon, and cloves. Sauté until fragrant.
  2. Add chopped onions and green chilies. Sauté until onions turn translucent.
  3. Add ginger-garlic paste and sauté for a minute.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add turmeric powder and salt. Mix well.
  6. Add all the chopped vegetables and mix well. Cook for a few minutes.
  7. Pour in the coconut milk and mix gently. Cover and cook until the vegetables are tender.
  8. Garnish with fresh coriander leaves and serve hot with rice or bread.
