Ingredients
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 1 cup chopped beans
- 1 cup chopped cauliflower
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1/2 cup coconut milk
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 2-3 green chilies, slit
- 1-inch cinnamon stick
- 2-3 cloves
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds, cinnamon, and cloves. Sauté until fragrant.
- Add chopped onions and green chilies. Sauté until onions turn translucent.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes and cook until they turn mushy.
- Add turmeric powder and salt. Mix well.
- Add all the chopped vegetables and mix well. Cook for a few minutes.
- Pour in the coconut milk and mix gently. Cover and cook until the vegetables are tender.
- Garnish with fresh coriander leaves and serve hot with rice or bread.
