Ingredients
- 1 lb stewing beef, cut into chunks
- 1 cup dried red kidney beans, soaked overnight

- 2 sprigs thyme
- 2 scallions, chopped
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, brown the stewing beef over medium heat.
- Add the soaked kidney beans, onion, and garlic to the pot.
- Pour in the coconut milk and add the thyme, scallions, and scotch bonnet pepper.
- Season with salt and pepper, then cover and simmer for 2 hours, or until the meat is tender and the beans are cooked through.
- Remove the scotch bonnet pepper before serving.
