Ingredients

  • 1 lb stewing beef, cut into chunks
  • 1 cup dried red kidney beans, soaked overnight

  • 2 scallions, chopped
  • 1 scotch bonnet pepper, whole

Instructions

  1. In a large pot, brown the stewing beef over medium heat.
  2. Add the soaked kidney beans, onion, and garlic to the pot.
  3. Pour in the coconut milk and add the thyme, scallions, and scotch bonnet pepper.
  4. Season with salt and pepper, then cover and simmer for 2 hours, or until the meat is tender and the beans are cooked through.
  5. Remove the scotch bonnet pepper before serving.
