Stew Pie (Karta Boregi) is a traditional dish from Kazakh Cuisine that combines the heartiness of a stew with the flakiness of a pie crust. This savory pie is perfect for a comforting family meal or a special occasion.

Stew Pie (karta Boregi)

Ingredients

  • 1 lb stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1/2 cup peas
  • 1/4 cup tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup vegetable oil
  • 1/2 cup water
  • 1 package of phyllo dough
  • 1/2 cup melted butter

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until translucent.
  2. Add the stew meat to the pot and cook until browned on all sides.
  3. Stir in the carrots, potatoes, peas, tomato paste, salt, black pepper, paprika, and water. Cover and simmer for 30 minutes, or until the meat is tender.
  4. Preheat the oven to 375°F (190°C).
  5. Layer 4 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
  6. Pour the stew mixture over the phyllo dough.
  7. Layer another 4 sheets of phyllo dough on top of the stew, brushing each sheet with melted butter.
  8. Bake for 25-30 minutes, or until the phyllo dough is golden brown and crispy.
  9. Let the stew pie cool for a few minutes before slicing and serving.
