Stewed Beef With Cassava Leaves

Ingredients

  • 1 lb beef, cut into cubes
  • 2 cups cassava leaves, chopped
  • 1 onion, diced
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 scotch bonnet pepper, chopped
  • 1 cup water
  • Salt and pepper to taste

Instructions

  1. Heat some oil in a large pot over medium heat.
  2. Add the beef cubes and brown them on all sides.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
  5. Add the tomatoes and scotch bonnet pepper, and cook until the tomatoes are soft.
  6. Return the beef to the pot and add the cassava leaves and water.
  7. Season with salt and pepper, then cover and simmer for 2 hours, stirring occasionally.
  8. Once the beef is tender and the cassava leaves are cooked, adjust the seasoning if needed.
  9. Serve the stewed beef with cassava leaves hot, with rice or fufu.
