Ingredients
- 1 lb beef, cut into cubes
- 2 cups cassava leaves, chopped
- 1 onion, diced

- 1 scotch bonnet pepper, chopped
- 1 cup water
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat.
- Add the beef cubes and brown them on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
- Add the tomatoes and scotch bonnet pepper, and cook until the tomatoes are soft.
- Return the beef to the pot and add the cassava leaves and water.
- Season with salt and pepper, then cover and simmer for 2 hours, stirring occasionally.
- Once the beef is tender and the cassava leaves are cooked, adjust the seasoning if needed.
- Serve the stewed beef with cassava leaves hot, with rice or fufu.
