Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 2 tablespoons chopped fresh parsley
Instructions
- Season the beef with paprika, cumin, salt, and black pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.
- Stir in the diced tomatoes, beef broth, tomato paste, and bay leaves. Return the beef to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 2 hours or until the beef is tender.
- Before serving, remove the bay leaves and stir in the chopped parsley.
