Ingredients
- 4 chicken thighs, bone-in and skin-on
- 8 dried shiitake mushrooms, soaked in hot water until softened
- 3 slices of ginger
- 2 cloves of garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 4 cups chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pot over medium heat. Add ginger, garlic, and green onions. Sauté until fragrant.
- Add chicken thighs to the pot, skin side down. Brown the chicken for 3-4 minutes on each side.
- Stir in soy sauce, oyster sauce, and sugar. Add the soaked shiitake mushrooms and chicken broth. Bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender.
- Season with salt and pepper to taste. Serve the stewed chicken and mushrooms hot, garnished with chopped green onions.
