Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 8 dried shiitake mushrooms, soaked in hot water until softened
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pot over medium heat. Add ginger, garlic, and green onions. Sauté until fragrant.
  2. Add chicken thighs to the pot, skin side down. Brown the chicken for 3-4 minutes on each side.
  3. Stir in soy sauce, oyster sauce, and sugar. Add the soaked shiitake mushrooms and chicken broth. Bring to a boil.
  4. Reduce heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender.
  5. Season with salt and pepper to taste. Serve the stewed chicken and mushrooms hot, garnished with chopped green onions.
