Ingredients
- 2 lbs mutton, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 1 cup beef broth
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 4 large sweet potatoes, peeled and cubed
- 4 tbsp butter
- 1/4 cup milk
Instructions
- Season the mutton with salt, pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat. Add the mutton and brown on all sides. Remove the mutton from the pot and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the tomatoes and bell pepper, and cook for 5 minutes.
- Return the mutton to the pot. Add the beef broth and thyme. Cover and simmer for 1.5 hours, or until the mutton is tender.
- Meanwhile, place the sweet potatoes in a pot of water and bring to a boil. Cook for 15-20 minutes, or until the sweet potatoes are tender. Drain the sweet potatoes and return them to the pot.
- Add the butter and milk to the sweet potatoes. Mash until smooth and creamy.
- Serve the stewed mutton with the sweet potato mash.
