Stewed Mutton With Sweet Potato Mash

Ingredients

  • 2 lbs mutton, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 cup beef broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 large sweet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/4 cup milk

Instructions

  1. Season the mutton with salt, pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat. Add the mutton and brown on all sides. Remove the mutton from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the tomatoes and bell pepper, and cook for 5 minutes.
  5. Return the mutton to the pot. Add the beef broth and thyme. Cover and simmer for 1.5 hours, or until the mutton is tender.
  6. Meanwhile, place the sweet potatoes in a pot of water and bring to a boil. Cook for 15-20 minutes, or until the sweet potatoes are tender. Drain the sweet potatoes and return them to the pot.
  7. Add the butter and milk to the sweet potatoes. Mash until smooth and creamy.
  8. Serve the stewed mutton with the sweet potato mash.
