Ingredients
- 1 lb okra, chopped
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced

- 1 lb smoked fish, deboned and flaked
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons palm oil
Instructions
- Heat the palm oil in a large pot over medium heat.
- Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are soft.
- Add the tomatoes and cook until they are softened.
- Add the okra and vegetable broth. Stir well and bring to a simmer.
- Add the smoked fish and season with salt and pepper. Cover and let it simmer for 30 minutes, stirring occasionally.
- Once the okra is tender and the stew has thickened, remove from heat and serve hot.
