Stewed Okra With Smoked Fish

Ingredients

  • 1 lb okra, chopped
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1 lb smoked fish, deboned and flaked
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons palm oil

Instructions

  1. Heat the palm oil in a large pot over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are soft.
  3. Add the tomatoes and cook until they are softened.
  4. Add the okra and vegetable broth. Stir well and bring to a simmer.
  5. Add the smoked fish and season with salt and pepper. Cover and let it simmer for 30 minutes, stirring occasionally.
  6. Once the okra is tender and the stew has thickened, remove from heat and serve hot.
