Ingredients
- 2 lbs oxtail, cut into pieces
- 2 tbsp vegetable oil

- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves

Instructions
- Season the oxtail pieces with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides. Remove and set aside.
- Add the chopped onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
- Return the oxtail to the pot. Add the butter beans, beef broth, red wine, and bay leaves. Bring to a simmer.
- Reduce the heat to low, cover, and let the stew simmer for 2.5 to 3 hours, or until the oxtail is tender.
