Ingredients

  • 2 lbs oxtail, cut into pieces

  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 1 can (15 oz) butter beans, drained and rinsed
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the oxtail pieces with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides. Remove and set aside.
  3. Add the chopped onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
  4. Return the oxtail to the pot. Add the butter beans, beef broth, red wine, and bay leaves. Bring to a simmer.
  5. Reduce the heat to low, cover, and let the stew simmer for 2.5 to 3 hours, or until the oxtail is tender.
