Stewed Pork Over Rice (滷肉飯)

Ingredients

  • 1 lb pork belly, cut into small pieces
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1/4 cup soy sauce
  • 1/4 cup rice wine
  • 2 tbsp sugar
  • 1 star anise
  • 2 cups water
  • 4 cups steamed white rice

Instructions

  1. In a large pot, cook the pork belly over medium heat until it starts to release its fat.
  2. Add the garlic and shallots, and cook until fragrant.
  3. Pour in the soy sauce, rice wine, and sugar. Stir to combine.
  4. Add the star anise and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the pork is tender and the sauce has thickened.
  5. To serve, spoon the stewed pork over bowls of steamed white rice.
