Stewed Pork With Breadfruit Stuffing

Ingredients

  • 2 lbs pork shoulder, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 cup chicken broth
  • 1 breadfruit, peeled and diced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Season the pork with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Brown the pork in batches and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the tomatoes and cook until they release their juices.
  5. Return the pork to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 1 hour.
  6. Add the diced breadfruit and thyme to the pot. Cook for an additional 30 minutes, or until the pork is tender and the breadfruit is soft.
