Ingredients
- 2 lbs pork shoulder, cubed
- 2 tbsp vegetable oil

- 1 breadfruit, peeled and diced
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Season the pork with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Brown the pork in batches and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the tomatoes and cook until they release their juices.
- Return the pork to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 1 hour.
- Add the diced breadfruit and thyme to the pot. Cook for an additional 30 minutes, or until the pork is tender and the breadfruit is soft.
- Adjust the seasoning with salt and pepper, if needed.
