Stewed Red Snapper With Okra

Ingredients

  • 4 red snapper fillets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup okra, sliced
  • 1 can diced tomatoes
  • 1 cup fish or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the red snapper fillets with salt and pepper.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
  3. Add the okra, diced tomatoes, fish or vegetable broth, tomato paste, and thyme to the pot. Stir to combine.
  4. Gently place the seasoned red snapper fillets into the pot, spooning some of the vegetable mixture over the top of each fillet.
  5. Cover the pot and let the stew simmer for about 20 minutes, or until the fish is cooked through and the flavors have melded together.
