- 1 lb saltfish, soaked and flaked

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt

Instructions
- In a large pot, sauté the tomatoes, onion, bell pepper, garlic, and scotch bonnet pepper until softened.
- Add the flaked saltfish to the pot and cook for 5 minutes.
- Pour in the coconut milk and simmer for 15 minutes, stirring occasionally.
- Meanwhile, in a bowl, combine the flour, baking powder, and salt. Gradually add water to form a soft dough.
- Divide the dough into small balls and flatten into discs to make the Johnny Cakes.
- Heat oil in a skillet and fry the Johnny Cakes until golden brown on both sides.
