Ingredients

  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1 1/4 cups boiling water
  • 1/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • For the toffee sauce:
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
  2. In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.
  3. In a large bowl, cream together the softened butter and brown sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour and baking powder, then gradually stir into the creamed mixture. Fold in the date mixture. Pour the batter into the prepared baking dish.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, make the toffee sauce. In a saucepan, melt the butter over medium heat. Stir in the heavy cream and brown sugar. Bring to a gentle boil, then reduce the heat and simmer for 5 minutes, stirring constantly.
  7. Once the pudding is done, poke holes in the top with a skewer and pour half of the toffee sauce over the hot pudding. Let it stand for 5 minutes before serving.
  8. Serve the sticky toffee pudding warm with the remaining toffee sauce drizzled over each portion.
