Ingredients
- 1 cup pitted dates, chopped
- 1 teaspoon baking soda
- 1 1/4 cups boiling water
- 1/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- For the toffee sauce:
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
- In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.
- In a large bowl, cream together the softened butter and brown sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour and baking powder, then gradually stir into the creamed mixture. Fold in the date mixture. Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, make the toffee sauce. In a saucepan, melt the butter over medium heat. Stir in the heavy cream and brown sugar. Bring to a gentle boil, then reduce the heat and simmer for 5 minutes, stirring constantly.
- Once the pudding is done, poke holes in the top with a skewer and pour half of the toffee sauce over the hot pudding. Let it stand for 5 minutes before serving.
- Serve the sticky toffee pudding warm with the remaining toffee sauce drizzled over each portion.
