Stir-fried Chicken with Cashew Nuts (腰果鸡丁)

Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cut into small cubes
  • 1 cup (150g) cashew nuts
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 green onions, chopped
  • Marinade for chicken:
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sugar
  • Sauce:
  • 3 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1/2 cup (120ml) chicken broth
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

Instructions

  1. In a bowl, mix the chicken with the marinade ingredients and let it sit for 10 minutes.
  2. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the cashew nuts and stir-fry until golden brown. Remove from the wok and set aside.
  3. Heat the remaining tablespoon of oil in the wok. Add the garlic and stir-fry for 30 seconds.
  4. Add the marinated chicken and stir-fry until it is no longer pink. Remove the chicken from the wok and set aside.
  5. In the same wok, add the diced bell peppers and stir-fry for 2-3 minutes.
  6. Return the chicken to the wok. Stir the sauce and pour it over the chicken and peppers. Cook until the sauce thickens.
  7. Add the cashew nuts and green onions. Stir to combine and serve hot.
