Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cut into small cubes
- 1 cup (150g) cashew nuts
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 green onions, chopped
- Marinade for chicken:
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon cornstarch
- 1/2 teaspoon sugar
- Sauce:
- 3 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1/2 cup (120ml) chicken broth
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
Instructions
- In a bowl, mix the chicken with the marinade ingredients and let it sit for 10 minutes.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the cashew nuts and stir-fry until golden brown. Remove from the wok and set aside.
- Heat the remaining tablespoon of oil in the wok. Add the garlic and stir-fry for 30 seconds.
- Add the marinated chicken and stir-fry until it is no longer pink. Remove the chicken from the wok and set aside.
- In the same wok, add the diced bell peppers and stir-fry for 2-3 minutes.
- Return the chicken to the wok. Stir the sauce and pour it over the chicken and peppers. Cook until the sauce thickens.
- Add the cashew nuts and green onions. Stir to combine and serve hot.
