Stir-Fried Chicken with Cashews (腰果鸡丁)

Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cut into small cubes
  • 1 cup (150g) raw cashews
  • 3 cloves garlic, minced
  • 1 red bell pepper, cut into small pieces
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp cooking oil

Instructions

  1. Heat 1 tablespoon of cooking oil in a wok or large skillet over high heat.
  2. Add the chicken cubes and stir-fry until they are no longer pink. Remove the chicken from the wok and set aside.
  3. Heat the remaining 1 tablespoon of cooking oil in the wok. Add the garlic, bell pepper, and cashews. Stir-fry for 2-3 minutes.
  4. Return the cooked chicken to the wok. Add the soy sauce, oyster sauce, sugar, salt, and black pepper. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
  5. Sprinkle the chopped green onions over the dish and stir to combine.
  6. Transfer to a serving dish and serve hot with steamed rice.
