Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cut into small cubes
- 1 cup (150g) raw cashews
- 3 cloves garlic, minced
- 1 red bell pepper, cut into small pieces
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp cooking oil
Instructions
- Heat 1 tablespoon of cooking oil in a wok or large skillet over high heat.
- Add the chicken cubes and stir-fry until they are no longer pink. Remove the chicken from the wok and set aside.
- Heat the remaining 1 tablespoon of cooking oil in the wok. Add the garlic, bell pepper, and cashews. Stir-fry for 2-3 minutes.
- Return the cooked chicken to the wok. Add the soy sauce, oyster sauce, sugar, salt, and black pepper. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
- Sprinkle the chopped green onions over the dish and stir to combine.
- Transfer to a serving dish and serve hot with steamed rice.
