Ingredients
- 1.5 pounds fresh clams, cleaned
- 2 tablespoons fermented black beans, rinsed and minced
- 3 cloves garlic, minced
- 2 red chili peppers, thinly sliced
- 1 tablespoon Shaoxing wine
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 cup chicken broth
- 2 tablespoons vegetable oil
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Heat a wok over high heat and add vegetable oil.
- Add garlic, fermented black beans, and red chili peppers. Stir-fry until fragrant.
- Add clams, Shaoxing wine, soy sauce, and sugar. Stir-fry for 1-2 minutes.
- Pour in chicken broth, cover the wok, and cook for 3-4 minutes or until the clams open.
- Season with salt and pepper to taste.
