Stir-Fried Prawns with Cashew Nuts (腰果炒虾仁)

Ingredients

  • 300g prawns, peeled and deveined
  • 100g cashew nuts
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 scallion, chopped

Instructions

  1. Heat the vegetable oil in a wok over high heat.
  2. Add the garlic and red chili, and stir-fry for 30 seconds.
  3. Add the prawns and stir-fry for 2-3 minutes until they turn pink and opaque.
  4. Add the cashew nuts, soy sauce, sugar, salt, and white pepper. Stir-fry for another 2 minutes.
  5. Add the scallions and stir-fry for 1 more minute.
  6. Transfer to a serving dish and serve hot.
