Stir-Fried Shredded Pork with Bamboo Shoots (笋尖肉丝)

Ingredients

  • 200g pork loin, thinly sliced
  • 200g bamboo shoots, shredded
  • 2 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 cup chicken broth
  • 1 tsp cornstarch
  • 2 green onions, chopped

Instructions

  1. Marinate the pork slices with soy sauce, Shaoxing wine, sugar, salt, and white pepper for 15 minutes.
  2. In a small bowl, mix the cornstarch with 2 tbsp of chicken broth.
  3. Heat the vegetable oil in a wok over high heat. Add the minced garlic and stir-fry until fragrant.
  4. Add the marinated pork slices and stir-fry until they are no longer pink.
  5. Add the shredded bamboo shoots and julienned red bell pepper, and continue to stir-fry for 2-3 minutes.
  6. Pour in the remaining chicken broth and bring to a boil.
  7. Stir in the cornstarch mixture to thicken the sauce.
  8. Garnish with chopped green onions and serve hot.
