Ingredients

  • 2 large potatoes, peeled and shredded
  • 200g pork, thinly sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Heat 1 tbsp of vegetable oil in a wok over high heat.
  2. Add the shredded potatoes and stir-fry for 3-4 minutes until slightly golden and crispy. Remove from the wok and set aside.
  3. Heat the remaining 1 tbsp of vegetable oil in the wok.
  4. Add the garlic, ginger, and green onions, and stir-fry for 1 minute.
  5. Add the pork slices and stir-fry until cooked through.
  6. Return the shredded potatoes to the wok.
  7. Add the soy sauce, oyster sauce, sugar, salt, and pepper. Stir-fry for another 2 minutes.
  8. Transfer to a serving dish and serve hot.
