Ingredients

  • 2 large potatoes, peeled and shredded
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 green onions, thinly sliced

Instructions

  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the shredded potatoes and stir-fry for 5-6 minutes until they are slightly golden and crispy.
  3. Push the potatoes to the side of the wok and add a little more oil if needed.
  4. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  5. Stir the garlic into the potatoes, then add the soy sauce, Chinkiang vinegar, sugar, salt, and white pepper. Stir well to combine.
  6. Cook for another 2-3 minutes until the potatoes are evenly coated and tender.
  7. Transfer the stir-fried shredded potatoes to a serving dish and garnish with sliced green onions.
