Ingredients
- 2 large potatoes, peeled and shredded
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons Chinkiang vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 green onions, thinly sliced
Instructions
- Heat the vegetable oil in a wok over medium-high heat.
- Add the shredded potatoes and stir-fry for 5-6 minutes until they are slightly golden and crispy.
- Push the potatoes to the side of the wok and add a little more oil if needed.
- Add the minced garlic and stir-fry for 30 seconds until fragrant.
- Stir the garlic into the potatoes, then add the soy sauce, Chinkiang vinegar, sugar, salt, and white pepper. Stir well to combine.
- Cook for another 2-3 minutes until the potatoes are evenly coated and tender.
- Transfer the stir-fried shredded potatoes to a serving dish and garnish with sliced green onions.
