Ingredients

  • 1 pound fresh shrimp, peeled and deveined

  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 green onion, finely chopped

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  3. Add the shrimp to the wok and stir-fry for 2-3 minutes until they turn pink and opaque.
  4. Season the shrimp with soy sauce, sugar, salt, and white pepper. Stir-fry for another minute.
  5. Splash the Shaoxing wine around the edges of the wok and stir-fry for a final 30 seconds.
  6. Garnish with chopped green onions and serve hot.
